Thanksgiving dinner will be just for the two of us, my wife and myself. We bought a turkey while they were on sale, but our meat for our Thanksgiving dinner will be a boneless leg of lamb roast. It is a bit over 6 pounds. Where I live, in northern Minnesota, Lamb is unusual meat. It’s also costly meat. I bought a whole leg of lamb for Easter a couple of years ago, and it cost me almost $100.
I found a store online, Wild Fork Foods. Their website is at https://wildforkfoods.com/. I have found buying their specials more than competitive with grocery store prices here. I should say that I have no connection with Wild Fork Foods other than enjoying their products. Thanks to a special Wild Fork Foods was running, the boneless leg of lamb roast was cheaper than an Eye of Round Roast from a local food store.
I will oven roast the boneless leg of lamb roast. We prefer to cook lamb to medium, about 140°F. The center of the roast is light pink, and the outer portion is well browned. There will obviously be leftovers, and I have not quite decided what to do with them.
We are not giving up all of the Thanksgiving traditions. We will have a green bean casserole and crustless pumpkin pie, and mashed potatoes, plus fresh dinner rolls.
