Not toilet paper but yeast

I have heard on the television there is a run-on toilet paper because of the COVID–19 virus. Judging from what’s not on the shelves in grocery stores here, it is baking supplies that are in short supply. You can usually buy 25-pound bags of flour, but there were none to be had the other day. We saw one woman who stocked up with a small 10 pound bags. She only bought five of them. The other thing that’s in short supply, and there was a note limiting them was yeast. During normal times, it’s a hassle to drive 30 some miles into town for just a loaf of bread. If you’re running low, you can throw some flour, yeast, and water in a bowl right around breakfast time. As lunchtime comes, you can punch down and knead the dough. Grease your pans and set them aside for the next rise. Pop them in the oven later and have fresh bread for supper. They say bread takes a long time, and that is only when the yeast is doing its thing. The other thing that takes a bit of time is kneading the dough. The only thing you’re doing when kneading is activating the gluten in the flour so that you get the small holes to make the bread light and fluffy. I find the all-purpose flour you get in the store needs tablespoon or two of gluten if you want light, fluffy bread. Celiac disease is an intolerance to gluten, but you wouldn’t be eating bread anyway.

I guess those of us who live in the country have a different lifestyle. Our neighbors are wild critters, such as bear and deer. They’re both excellent eating. Especially after they’ve have snacked in your garden all summer. They taste even better. Yes, we have a different lifestyle. We can eat some of our neighbors!
